SSP Silver Knight Lab Sweet 64mm Cast Burrs

Premium burrset from SSP Grinding Solution with 64mm diameter size specifically designed for brewed coffee. This burrset is made of cast steel and ground used CBM diamond wheel, similarly to the Ditting Lab Sweet burrs.

It features a custom geometry and a different top and bottom design typically only found on high end grinders.  These burrs ensure an optimal particle size spread within the grounds in order to achieve a consistent extraction and more sweetness inside the cup

These SSP Silver Knight burrs are always treated and do not require seasoning like other burrs.  They will bring a little bit slower until they are coated with coffee oils (5-10kg) but you don't need to grind 10lbs of rice before you start using them!  SSP also guarantees no chipped egdes or damaged edges which are known to cause poor consistency and short life time on regular burrs.

Cast V2 are the Best 64 Burrs

I bought the MP's a few years ago and enjoyed them, curiosity got the best of me and bought the Cast burrs. Cast V2 for pour overs has exceeded my exceptions. I get clean, sweet, juicy cups, with good clarity of flavour and a really nice body. Just perfect for what I've been looking for. Didn't take too long to season and at first there were a lot of fines but as the burrs seasoned the fines are much less.

A season of seasoning

Sorry, some people love these, but I'm not really a fan. It seems very nice and high body but hardly any flavour clarity that I am looking for in a light roast. Not sure I noticed any 'sweetness' either. Maybe with a perfected alignment and 30lbs of seasoning it improves but I don't have the patience for that. Out of the box the SSP HU or MP burrs I liked a lot more (even liked the stock burrs more!). I have a theory even if your alignment is off, the MP burrs are so unimodal they're still good with imperfect alignment, you may just end up with a little more body and balance for those.

With these SSP cast burrs (lab sweet knock offs) it basically reminded me of what I was getting with my Specialita or Baratza Vario with Ceramic burrs, or pretty much any lower end conical burr grinder, so I felt I turned my expensive P64 grinder (or even a DF64) into a cheaper / lower end grinder with these :O
I've actually had two sets of these and both performed similarly, in a DF64 and P64.

I've been told after seasoning it may get almost as good clarity as the SSP MP burrs but more balanced and with more body, and that would be awesome and sounds ideal, however, I don't have patience for that, I don't want to waste so much coffee seasoning, or waste the potential of my good coffees with these burrs in the meantime, so I ended up reselling them at a slight loss.

I'm expecting Option-Os Mizen omni burrs, which is a similar design so hopefully those are better, without the long seasoning process.

I generously gave these 2 stars due to its potential. BUT if it does require so much seasoning, it should really come with a disclaimer.

Great Burr but no seasoning is false advertising.

These burrs are great but saying they don’t require seasoning like other burrs do is a lie. The document from SSP that was inside the box says you should season with 3-5kg of dark roasted coffee. I ground 3.5kg and shimmed the burrs for perfect alignment in my Fellow Ode then made some coffee. The grind size was extremely varied with lots of powder and big pieces. The coffee bed was muddy and cups were always astringent. I read that these burrs required up to 25lbs to be seasoned so I ground another 4.5kg of dark roast. Afterwards the grounds looked much more uniform in their size and the cups of coffee tasted vastly better. The burrs produce amazing cups of coffee with big body and sweetness and a balanced acidity. Now it seems impossible for me to get astringent cups even when grinding super fine. I’m happy with the burrs and the coffee profile from them but having to grind 8kg of coffee before being able to get anything tasty from them is absurd. In addition to the price of the burrs I spent almost $200 on bags of Costco coffee that I have no intention of ever drinking and several hours grinding those bags.
In the end I still recommend these burrs and I’m happy with my purchase but you should know what you’re getting into when you buy.
