Our Single Origin Stories: Meet Chloe!

When I was young, I never understood the hype of coffee. It was bitter, it was unpleasant, and it made my stomach and head feel funny. All I knew was that if I wanted to be on my parents' good side, it was required they already be drinking a cup, or that whatever my request of the morning was, it came accompanied by a mug of the hot brown stuff.

As a young adult, I tried to get into coffee for the buzz, but it wasn’t until a boyfriend brought me to Credo Coffee in Edmonton that I started to understand what coffee could mean. I settled into my standard drink pretty quickly; a trad cappuccino, baby temp. The gentle warming of the milk brought out such a delicate sweetness. Paired with the classic Italian roast profile preferred by Credo at the time, it was an experience to say the least.

When I moved to Copenhagen in 2015, coffee changed for me again as I started to taste more light roasts at Coffee Collective, as well as over familiarize myself with the baristas as I was a transplant in a city where I knew no one. Soon, I knew most of the baristas by name, and had also gained a strong appreciation for Kenyan grown pour over, which felt to me as if coffee and tea had combined into a buzzing, light, bright, and sweet drink. 

I still would list these two rather polar opposites as my favorite options. Settled now in Calgary, though, I would definitely recommend anyone to try out an Espresso Tonic once we hit the dog days of summer - truly the best non alcoholic cocktail in my books, and a life saver on those sticky, +30 days.
